Pea + Peanut Salad

This is one of those "you have to try it before you decide" recipes. It sounds weird; I was skeptical at first as well. But once I tried it, I was sold. It's sweet and crunchy, savory and creamy, all at the same time.

Pea & Peanut Salad

1/2 cup sour cream
1/2 cup mayonnaise
1/2 teaspoon lemon juice
1/4 teaspoon garlic powder
1/2 teaspoon Worcestershire sauce
1 lb frozen peas, thawed
1 lb Spanish or cocktail peanuts

In a bowl, combine everything except the peas and peanuts. Mix well. Gently stir in the peas and peanuts, ensuring everything is coated well. Chill at least one hour before serving.

Rating: 4.5 out of 5 stars - a nice, different side dish. I served it with smoked sausage and noodles. As a bonus, my two-year old scarfed it down!

Reese Cup Brownie Bites

Reese Cup Brownie Bites

Ingredients:

1 box of Dark Chocolate Fudge Brownie Mix (plus ingredients as the box indicates)
36 Mini Reese Cups
Mini muffin tin liners

Mix the brownie mix as instructed on the box. I prefer to only use one egg for a fudgier brownie. Place liners into cupcake pan. Place approximately 1/2 tsp onto the bottom of each liner. This will prevent the Reese cup from getting hard on the bottom. Center Reese cups into the liners on top of the brownie mix.
Cover the Reese cup with approximately 1 tbsp of brownie batter. I use the small scoop from Pampered Chef for easy measuring. Make sure all sides of the Reese cup are covered with brownie batter to prevent the Reese cup from burning.

Bake at 350 for 11-13 minutes. Let cool for 10 minutes
before removing from cupcake pan.

I chose to give mine a little flare and frost with Peanut Butter Fluff. I used the Pampered Chef Easy Decorator to make little puffs on top.

Enjoy! Happy 4th of July!

Yummy Potato Casserole

Potato Casserole

1 package (30oz) frozen shredded hash brown potatoes, thawed
2 c. shredded cheddar cheese (I used 1 cup cheddar and 1 cup of hot pepper cheese)
1/4 c. chopped onion
2 c. sour cream
1 can of condensed cream of chicken soup, undiluted
1/2 c. butter, melted and divided
2 c. French's Fried Onions
1/4 tsp salt
1/2 tsp pepper

In a large bowl, combine the hash browns, cheese, onion, green peppers, salt and pepper. In another bowl, combine sour cream, soup and 1/4 of the melted butter. Pour over potato mixture and mix gently. Pour into a greased 3 qt. baking dish. Toss French's Fried Onions in the remaining melted butter and sprinkle over the top of the casserole. Bake uncovered at 350 degrees for 45-55 minutes.

This is great for potlucks, dinner parties and holidays.

Yummy Factor: 5 stars!

Poppy Chicken

Mmmmm, this is one of our household favorites. In fact, I made it for DH's birthday celebration a few weeks ago. He walked in the house after a week away, took one sniff, and smiled, "I smell poppy chicken!" It's not low-cal or low-fat, but hey, it was a birthday celebration! Even my kids like it!

Poppy Chicken

Ingredients
2 lbs. cooked chicken, shredded or cubed (I cook mine in the crockpot all day, so it shreds quite easily.)
1 can of cream of chicken soup (any cream soup would work fine)
1 c. of sour cream (I just fill up the empty soup can and call it good.)
1 stick of butter (told you it wasn't low-cal)
1.5 sleeves of Ritz Crackers, crushed
3 T. poppy seeds

Directions

Preheat the oven to 350. Lay the cooked chicken in the bottom of a 9x13 casserole dish. Mix together the cream of chicken soup and sour cream. Spread over the top of the chicken (do not stir together).

Melt the butter, and add the crushed Ritz Crackers. Stir well. Add the poppy seeds, and stir well again. Sprinkle over the top of the saucy chicken

Bake for 30 min uncovered.

I serve with a steamed green veggie (asparagus this time). I typically don't do a starch since it has the crackers on top; it makes me feel better about the calorie count!

BBQ Kielbasa

I apologize for not having a picture of these. I assure you, they are excellent.

BBQ Kielbasa Appetizers

2 lbs of Kielbasa, cut into 1/2 inch pieces, cooked and slightly browned
1- 18oz bottle of Sweet Baby Ray's BBQ Sauce
1/2 c. brown sugar
1/2 c. Dijon Mustard
1 beer

In a large saucepan, bring beer, sugar, BBQ sauce and mustard to a boil. Boil for 15 minutes and add cooked kielbasa. Reduce to a simmer and cook for 45 minutes until sauce is glazey.

Rating: Well, since these disappeared so quickly that I could not get a picture, I would say they are pretty good. 5 stars for sure!

Salsa

Salsa and Margaritas are a summer staple around these parts. This is a fresh salsa recipe that's easy to make. Thanks for sharing Michelle!

Salsa:

6 Roma Tomatoes, diced
1/2 red onion, diced
1/2 red bell pepper, diced
2 jalapeno peppers, diced
1 tbsp. olive oil
1 tbsp. lime juice
3 cloves of garlic, minced
salt to taste
pepper to taste
chili powder to taste ( I used 1/2 tsp.)

Mix together in a medium bowl, chill and serve!

Helpful hint: Kevin and I love our Vidalia Onion Chopper. This makes dicing these vegetables effortless. It's well worth the $20.

Peanut Butter Fluff

Amy will testify that this Peanut Butter Fluff, or Fluff as she calls it, is the best thing since sliced bread. It's amazingly easy to make, it makes a great frosting for fudge brownies or just eat it with pretzels or graham cracker sticks like we love to do. This is a staple for get togethers. It's sinfully delicious.

Peanut Butter Fluff

Ingredients:

1 tub of Marshmallow Fluff
1 c. Jif Creamy Peanut Butter (heaping)
1/4 c. milk

In a large bowl, mix ingredients with mixer until fluffy. Serve with graham cracker sticks or pretzels. Try not to eat the whole bowl, I dare you.

Rating: Fluff speaks for itself, but for this blogs sake I give it a 10!

Chicken Marsala

Ahhh, where has the time gone? Let's see, work, work, work, sinus infection, chronic cough, work and work. I think that just about sums it up.

Almost 2 weeks ago, we had some friends over for dinner. The menu was Chicken Marsala, Roasted Red Skinned Potatoes and Garden Salad (mac n cheese and corn for the kids!). I love when my friends with children come over. I vacuum, dust, fluff pillows, tidy all my knick knacks and, in 2.2 nanoseconds, you cannot even tell the difference. They came packed for a weekend visit and I think they were there for 3-4 hours. It's hilarious and I loved every minute of it! They filled my home with giggles and grins. Come back soon, ok?

Chicken Marsala and Roasted Red Skinned Potatoes

Ingredients:
1/4 cup all-purpose flour for coating
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon dried oregano
4 skinless, boneless chicken breast halves - pounded 1/4 inch thick
4 tablespoons butter
4 tablespoons olive oil
1 cup sliced mushrooms
1/2 cup Marsala wine
1/4 cup cooking sherry

In a shallow dish or bowl, mix together the flour, salt, pepper and oregano. Coat chicken pieces in flour mixture. In a large skillet, melt butter in oil over medium heat. Place chicken in the pan, and lightly brown. Turn over chicken pieces, and add mushrooms. Pour in wine and sherry. Cover skillet; simmer chicken 10 minutes, turning once, until no longer pink and juices run clear.

Roasted Red Skinned Potatoes

Ingredients:
3 lbs Red Skinned Potatoes
1/2 c. (approximately) Olive Oil
4 tbsp. Tastefully Simple Season Salt (yes, it makes a difference!)
1 onion, diced

In a large 9x11 pan, pour 1/4 c. olive oil into the bottom of the pan. Add diced red skinned potatoes and onion. Add remaining olive oil. Sprinkle season salt and mix well. Bake for 1 hour @ 450 degrees or until browned.

Meal Rating: 4.5 out of 5. The potatoes took a little longer to cook, so my chicken was cold. I will defiantly make this again. Becki, what did you think?

Divide the Chicken mixture evenly between the 5-6 tortillas. Toll and place in a 9x13 pan. Spread the remaining chicken soup mixture over the rolled shells. Sprinkle 1 c. shredded cheese over shells. Cover with foil and bake @ 350 for 40-45 minutes. Serve with rice and corn cake.

Crock Pot Lasagna

This recipe is courtesy of Bob Evans:

Crock Pot Lasagna

Ingredients:
1/2 lb. Bob Evans Sausage
1/2 lb. lean hamburger
2-24 oz jars of pasta sauce (I used Prego)
12 oz. Ricotta cheese (I substituted 2 c. Provolone)
2 cups Mozzarella
1 cup uncooked lasagna noodles broken into small pieces
1 tsp. parsley

Brown sausage and hamburger in a large skillet. Spray crock pot with non stick cooking spray. In a large crock pot, mix pasta sauce, sausage, hamburger, ricotta (or Provolone), 1 c. of the mozzarella, parsley and uncooked noodles. Cook on low for 4-6 hours or until pasta is tender. 5 minutes before serving, sprinkle the remaining 1 c. mozzarella on top and cover.

Meal rating: 4 out of 5. Kevin really liked it, but it's a bit meaty for my liking. If you like meaty lasagna, than you should be happy with the outcome.

Buckeyes

It's an Ohio tradition to make Buckeyes for the Holidays. They are smooth and creamy!

Buckeyes

Ingredients:
1 1/2 sticks of butter
1 c. Jif peanut butter
4 oz. cream cheese
6 c. powdered sugar
2 lbs. milk chocolate (I prefer Merkens or Ambrosia)

In a large bowl, mix softened butter and cream cheese. Mix on high until creamy. Add vanilla and peanut butter. Slowly add powdered sugar, mixing thoroughly. Roll into balls and place on a cookie sheet and place the balls into the freezer for 30 minutes. Melt chocolate in the microwave stirring every 30 seconds to prevent burning. Use a toothpick to dip the balls into the chocolate leaving just the tops uncovered. Place them back on the same cookie sheet and chill in the refrigerator until they are set.

This recipe makes approximately 80 buckeyes about the size of a large gumball.

Holiday Fudge-Yum!

This is the easiest fudge recipe. It melts in your mouth!

Holiday Fudge

Ingredients:
1 16oz. container of Marshmallow Fluff
5 c. sugar
2 cans of evaporated milk (5 oz. cans)
1/4 lb. butter
1 jar of fudge (16oz)
1 1/2 tsp. vanilla
24 oz. milk chocolate chips (or 2 small bags)

Mix the first 4 ingredients together in a large saucepan. Stir over low heat until blended. Bring to a slow boil over medium heat. Be careful not to mistake the air bubbles for a boil. Boil slowly for 5 minutes, stirring constantly. Remove from heat. Stir in chocolate chips and vanilla (and optional walnuts) until chocolate is melted. Pour into buttered 9x13 pan or 2 9x9 pans. Cool completely.

To make peanut butter fudge, simply substitute peanut butter chips and a heaping tablespoon of Jif for the chocolate chips.
This recipe makes approximately 5 lbs. of fudge.

Homemade Taco Salad Bowls

These homemade bowls are quick and easy.
Makes Mexi-night even more delicious!

Ingredients:

3 large tortilla shells
3 arms length pieces of foil
Pam cooking spray

Preheat oven to 400 degrees. Loosely ball foil into softball sized balls. On a large cookie sheet, spray the tops of the balls with Pam cooking spray. Center the tortillas over the foil balls and gently press down in the center to prevent them from rolling. Spray the tortillas with a light coating of Pam before placing in the over. Cook for 8-10 minutes or until golden brown.

Ideas for serving:

  • Fill with lettuce, taco seasoned meat, cheese and ranch dressing for a delicious taco salad.
  • While warm, lightly coat with melted butter, sprinkle with cinnamon and sugar. Drizzle chocolate over the bowl and service with a scoop of ice cream. Drizzle extra cinnamon, sugar and chocolate on the ice cream and top with whipped cream and a cherry. Yum!
  • Fill with steak, sauteed onions and peppers for a great steak bowl

Enjoy!

Pumpkin Pie

This Thanksgiving, I decided to try and make homemade everything and pies were on that list. I am not a fan of pumpkin pie, but Kevin loves it. Oddly enough, these were the only items from scratch that I made. Who has the time, right?

Pumpkin Pie

3/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
1 can (15 oz.) Pumpkin
1 can (12 fl. oz.) Evaporated Milk
1 unbaked 9-inch (4-cup volume) deep-dish pie shell
Whipped cream (optional)

Mix sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. Pour into pie shell. Bake in preheated 425° F oven for 15 minutes. Reduce temperature to 350° F and bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving.

Again, I am not a person who likes Pumpkin Pie, but I can tell you that one pie went home with the in laws and the other has been eaten by Kevin. I have heard zero complaints. Maybe Kevin knows better...

Guinness Cupcakes - Beware, obscene amounts of yumminess inside!

Rich, moist, chocolate-y, Guinnessy goodness. These are obscenely yummy and addictive enough to quite possibly require an intervention.

Recipe and photo courtesy of Celebrations.com.

Guinness Chocolate Cupcakes with Guinness Vanilla-Bean Buttercream Frosting
(As written, the recipe makes 48 cupcakes.)

Cupcakes

2 Cup(s) Guinness Extra Stout (basically works out to one can)
3 Sticks Unsalted Butter
1 1/2 Cup(s) Unsweetened Chocolate Chunks (12 oz.)
4 Cup(s) All Purpose Flour
4 Cup(s) Sugar
1 Tablespoon Baking Soda
1 1/2 Teaspoon Salt
4 Large Eggs
1 1/2 Cup(s) Sour Cream

Preheat oven to 350 degrees

Bring stout and butter to a simmer in a large saucepan over medium heat. Do not boil.

Add unsweetened chocolate chunks to hot stout/butter mixture. Whisk until chocolate melts. Turn heat off and let cool.

Add sugar to chocolate mixture and whisk to combine. Sift flour, baking soda and salt.

In a stand-alone mixer with a whisk attachment, combine the eggs and sour cream on medium speed. Add stout-chocolate mixture to the egg mixture and combine on medium-low speed until encorporated.

Slowly add flour mixture in thirds to chocolate mixture with whisk attachment. Scrape the sides with your whisk to make sure you get all the dry ingredients combined.

Place cupcake papers in pan and divide batter into cups evenly. Fill about 2/3 of the cup.

Bake for 18-24 minutes or until the tops are firm to the touch, and a toothpick comes out clean when inserted into the cupcake.

Let cool on wire rack before frosting.

Frosting
2 Cup(s) Unsalted Butter (room temperature)
5 Cup(s) Sifted Powder Sugar
1/2 Cup Milk
1 Whole Scraped Vanilla Bean (expensive but worth it - don't skip!!!)
1 Tablespoon Vanilla Extract
2 Cup(s) Guinness Extra Stout

In a sauce pan, simmer Guinness on low heat for 10-15 min, until it stout becomes reduced and thicker in consistency. Similar to a syrup. *Tip: keep your eye on the store, so stout does not over cook. Let cool.

In a stand alone mixer, cream your butter for 1 minute

Slowly add the powder sugar in thirds, alternating with a little milk each time till mixture is creamy. Add scraped vanilla bean and vanilla extract.

Slowly add reduced Guinness a little at a time. Taste test to desired flavor. You may not use all the Guinness reduction.

Place buttercream in a piping bag with a #848 french star tip, frost cupcakes and enjoy!
